I am of the opinion that Chocolate Chip Cookies should NOT be messed with.
They are perfect the way they are.
You should NOT substitute raisins for the chocolate chips. No! No! No!
And even though I have enjoyed whole wheat chocolate chip cookies, dessert is NOT the place to get health conscious.
Therefore, because I know how much you will love and use this recipe, I am sharing it with you.
This is the cake I make when suddenly one of the 13 kids who play in our yard announces to me that TODAY is his birthday, and can he stay for lunch.
Or when I have last minute company.
Or when I have company that I knew was coming for a long time, but didn’t get around to making a dessert.
Or when I have a chocolate craving.
Or when I get the “baking bug” but don’t want to wash a lot of dishes.
Or when I realize that my Cub Scout has a Pot Luck Picnic before his graduation ceremony, and I don’t have anything to bring.
So here, I will share.
I have to add that this isn’t a Rebecca original. Debbie from Ecuador gave it to me.
Chocolate Chip Cake
1/2 c. butter
1 c. sugar
1 t. vanilla
2 c. flour
1 t. baking powder
1. t. baking soda
1/2 t. salt
Add the dry ingredients to the butter mixture.
1 c. sour cream or yogurt or buttermilk or combination of what you have in your frig.
Add the entire package of chocolate chips or should I say, the rest of the chocolate chips that you haven’t eaten.
Stir until combined
Pour into GREASED WITH SPRAY PAM WITH FLOUR bundt pan or other pan.
Bake at 350 for about 30 – 40 minutes.
I don’t frost or glaze this cake, but if I happen to have some Milk Chocolate Hersey’s Bars on hand. I will rest some pieces in the center of the heart and let them melt–then spread smooth.
Here is my cub scout “graduating” a younger scout–they pass on their neckerchiefs and slides. I love that I captured this (in my opinion) tender moment between two boys.
Of course it wasn’t all seriousness. Here is the year end Tug-of-War, and here is Side1 !
